Protein crepes recipe

Here is a recipe for preparing protein crepes, ideal for a healthy, protein-rich breakfast or snack.

Ingredients:

1 cup oat flour (or almond flour for a gluten-free option)
1 cup skim or low-fat milk (or non-dairy milk for a vegan option)
2 eggs (or vegan egg substitute)
1/4 cup of protein powder (choose your favorite flavor, such as vanilla or chocolate)
sweetener of your choice (honey, maple syrup, stevia, or other)
1 teaspoon vanilla extract (optional)
A pinch of salt



Instructions for the preparation:

In a bowl, mix the oat flour (or almond flour), protein powder, and salt.

In another bowl, whisk the eggs (or egg replacer) with the milk and sweetener. Add vanilla extract too, if you want extra flavor.

Combine the dry ingredients with the liquid ones and mix well until you obtain a smooth batter. Make sure there are no lumps.

Heat a non-stick pan over medium-low heat and lightly grease with oil or butter.

Pour a ladle of batter into the hot pan and spread it evenly to form a thin crepe. Cook until the surface starts to bubble and then carefully turn it over.

Cook the other side for a couple of minutes or until golden.

Repeat the process with the rest of the batter. The quantity of crepes produced will depend on the desired size.

Serve the protein crepes hot, garnished as desired with fresh fruit, nuts, Greek yogurt or other ingredients of your choice.
