Chicken and courgette skewers recipe

An easy recipe for preparing chicken and courgette skewers with a high protein content which are perfect for those following a diet linked to training in the gym.

Ingredients:

2 chicken breasts, cut into cubes
2 courgettes, cut into thick rounds
1 red pepper, cut into pieces
1 red onion, chopped

Marinade:

1/4 cup olive oil
Juice of 1 lemon
2 cloves garlic, minced
1 teaspoon paprika
1 teaspoon of black pepper
Salt to taste
Grilling skewers

Instructions:

Make the marinade by mixing the olive oil, lemon juice, minced garlic, paprika, black pepper and salt in a bowl. This will be the marinade for the chicken and vegetables.

In a separate bowl, place the chicken cubes and pour half the marinade over them. Mix well so that the chicken is completely covered in the marinade. Cover and leave to marinate in the refrigerator for at least 30 minutes.

In the meantime, prepare the vegetables by cutting the courgettes into thick slices, the red pepper into pieces and the red onion into pieces.

After the marinating time, alternately thread the chicken cubes, courgettes, pepper and onion onto grilling skewers.

Preheat a grill or non-stick griddle and brush lightly with oil to prevent the skewers from sticking.

Cook the skewers on the heated grill or griddle, turning them occasionally and brushing them with the remaining marinade. Cook until the chicken is cooked through and the vegetables are tender and lightly charred.

Once cooked, serve the chicken and courgette skewers hot and garnish them with a little fresh parsley or other herbs to taste.

These chicken and zucchini skewers are packed with lean, nutritious protein and can be a great addition to your gym diet. They are tasty, filling and easy to prepare. You can customize them with your favorite vegetables and season with light sauces if you wish.
